Honed to a super-sharp 15° angle (known as ‘Japanese’) that is renowned – and coveted – amongst professional chefs and keen cooks alike, it’s easy to maintain this blade with a steel or whetstone, but the Wusthof Crafter 2-Stage Pull-Through Knife Sharpener (Ref 26608) is recommended for ultimate honing and sharpening.
